Low-Carb "Pancake"
This is a recipe taken from another SP user, posted as South Beach Belgian Waffle. I only reposted because I used a low-fat ricotta instead of part-skim, which lowers the calories a bit. I am not crazy about Splenda, either, so I sometimes leave it out and use vanilla. This would be great made with savory spices and served for dinner as well.
