Ingredients

Flax Seed Meal (ground flax), 2 tbsp
Baking Soda, .5 tsp
Organic cane sugar, 1 tsp
pinch salt
Milk, 3.25%, 2 tbsp
Egg white, large, 2
Nutiva organic extra virgin coconut oil, 1 tbsp
Tips
i made 3 small "pancakes" (they were very fluffy and airy thanks to the whipped egg whites)
i topped them with more coconut oil, 2 Tbsp of strawberry cream cheese, then sprinkled on some true lemon half a teaspoon of organic cane sugar. with all that, total carbs is only 16 grams !!
Directions
start to heat skillet on low
in a small bowl, mix dry ingredients.
add milk, stir til combined and let sit while you whip the egg whites to firm peaks
fold egg whites into batter, half at a time, gently.
add coconut oil to skillet (as needed for cooking, i put half in and then the rest when i turned them.
pour batter on (flaxmeal doesnt bubble, so careful to not overcook)
cook on both sides.
Serving Size: makes 1 serving (number depends on how big)
