Ingredients

    Pancake ingredients:
    2.25 oz Pork Skins
    3 TBS Almond mill or flour
    3 large eggs
    3 TBS heavy cream
    3/4 tsp Vanilla extract
    6 TBS sugar free or low carb syrup
    3 Sausage patties

    Filling ingredients:
    3 egg patties
    3 Sausage patties
    3 slices cheese (if desired, but not figured in on fat and carbs I calculated)

Tips

I made this on a whim, so I used the only sugar free syrup I had, which happened to be Mrs. Butterworths. When checking on the calculator, I found others that were lower carb, so you could probably make with even lower carbs if you shop around.


Directions

Grind pork skins in food processor. Pour into bowl and stir in remaining pancake ingredients. If you have a metal form to put in your frying pan, place in pan with 1 TBS oil and pour batter in to fill. I personally didn't have one, so just poured in as a pancake. Brown, then flip. Repeat until you have 6 "pancakes". Either cook sausage and egg in the metal form or you can do as I did and use a packaged sausage patty and packaged egg patty. Assemble pancake, egg & sausage and enjoy.
