Introduction
This is a recipe taken from another SP user, posted as South Beach Belgian Waffle. I only reposted because I used a low-fat ricotta instead of part-skim, which lowers the calories a bit. I am not crazy about Splenda, either, so I sometimes leave it out and use vanilla. This would be great made with savory spices and served for dinner as well. Ingredients:
Ricotta Cheese - Lowfat, 0.25 cup
Egg, fresh, 2 large
Baking Powder, 0.5 tsp
Cinnamon, ground, 1 tsp
Nutmeg, ground, 0.5 tsp
*Splenda, 1 tsp
Directions
Heat small skillet over med-heat (or you can use a waffle iron).
Crack eggs into med. bowl and beat with mixer about 1 minute, until fluffy.
Add ricotta, baking powder, cinnamon, nutmeg, and Splenda (to taste). Beat until smooth.
Pour into skillet and cook until browned and top is set, then flip. (Note- a bigger skillet will give you a thinner pancake.. more like an omelet. The smaller skillet will give you a fluffy pancake)
