Two guesses- 1.) Uncle Ben's is a sponsor of SparkPeople, and 2.) Uncle Ben's doesn't care about our health. They want you to buy their product. Read with discretion, folks. With white rice and sugar, this isn't something anyone who is trying to live a healthy lifestyle should be eating regularly. - 5/16/14

Serving size is listed as 1/2 cup...not sure why so many think its 1/4 cup! I would certainly leave some of the sugar out though. Bu the idea of coconut, orange and cinnamon together sounds like well worth the calories...for special occasion dessert. We just don't "do" dessert regularly anyway! - 5/23/14

If it took you three oranges to get 2tbsp of orange zest, you really need to think about how you're zesting your oranges. It took one orange to get well over two tablespoons of zest and I get the added bonus of not wasting two oranges. Overall, good, if you alter the recipe to your tastes... - 5/18/14
