Ingredients

    1 lb chicken breast, cut into strips
    2/3 cup bisquick, heart smart
    2 -3 tsp seasoned salt
    2 tbsp grated parmesan
    Skim milk
    1 tbsp margarine

Directions

Soak chicken in skim milk .
Heat oven to 425 degrees. Spray baking sheet with PAM.
Slightly melt margarine in dish while preparing coating.
Stir together bisquick, salt, and parmesan in plastic bag. Coat chicken and place on baking sheet with melted margaine. Bake about 35 minutes, turning halfway through. Time depends on thickness of chicken pieces.

    The coating will stick better to the chicken if you add an egg to the milk (but the stats will change a bit). I also added some extra seasonings to the coating (pepper, garlic, basil, rosemary). It was DELICIOUS. Very moist. I'll definitely make this again. - 2/10/09

    Incredible!
    Second time making this recipe and this time I put the chicken in milk with some egg beaters. The bisquick stuck to the chicken much better. Put it all in a ziplock bag, shook it and then left it in there about 5 minutes while I got the baking dish ready. Husband loved it and so did I! - 4/13/10
