Introduction

Ingredients

    1 cup brown rice2 cups water2 (15.5 ounce) cans black-eyed peas, drained and rinsed1 (10 ounce) can diced tomatoes with green chile peppers

Directions

1. Bring a small pot of rice and water to a boil. Cover pot, reduce heat to simmer and let cook 20 minutes or until rice is tender.
2. In a large saucepan, combine rice, peas, tomatoes and chili. Stir the mixture over a medium heat until it is heated through.

Makes 10 servings

    We love blackeye peas and I add them to soups a lot, but never thought of making them the base of the soup. I didn't have tomatoes with chile's so I use Italian with onions an basil and a little salsa to add the kick.
    Will make it again.

    I substituted part of the rice with barley and quinoi for more protein and fiber. This was pretty good, but I added fresh minced garlic and cumin for flavor. I also added Bragg's for more flavor and nutrition, but it still seemed like it was missing something. - 5/27/09

    I am not rating this because I have not tried it... but the reason I did not try is because rice is not on program. If this is salsa, then why is rice being used? What alternatives are there for those of us who choose to eat a healthier version of this meal? - 1/3/10

    I think I might like this but I'm going to use dry beans instead of canned. I agree with other comments about the addition of onions and garlic. I'm not going to cook the rice with the peas. I'm going to cook a bag of Success instant brown rice and serve them together. Thanks for sharing! - 5/8/09
