Ingredients

    2 eggs
    1 c. sugar
    1 c. flour
    1/2 tsp. cinnamon
    1/2 tsp. salt
    1/2 tsp. baking soda
    1/2 tsp. baking powder
    1 c. chopped apples
    1/2 c. raisins (opt.)
    1/2 c. nuts (opt.)

Directions

Beat eggs and sugar very well. Sift dry ingredients. Add to eggs and sugar. Stir in apples, nuts and raisins.* Bake in greased and floured tin at 350 for approx. 50 min. Yields 1 loaf cut into 12 slices.

*May also sprinkle a cinnamon/sugar mix on top before baking (not included in nutrition calculator)

    I made this with whole wheat flour, 2 apples, raisins and walnuts, and it was very good! I also added a little more spice (cinnamon and clove) because I like it spicy. I will make this again, maybe today! - 9/9/13

    Very Good
    I just made this bread today and I am really impressed. I was curious about it not having any oil or shortening or butter. The lack of these ingredients makes this a very light bread and I really like it. I used about 2 C of apples but otherwise did not alter. Very good! - 1/1/11

    I also used tart apples, and I added a dab of sugar-free maple syrup. I also used the splenda blend and used raw sugar on the top for a tasty crust. For the holidays, I'm going to use sugar free caramel sauce for caramel apple bread! Hope I helped! - 10/15/10

    So delicious. I used a bit more apple about 1.5 c total and a bit more cinammon. My apples were getting ready to go bad and this was the perfect way to use them. My family has requested another loaf already! - 3/19/09

    Very Good
    I added the optional half a cup of walnuts; otherwise, I used the recipe as written. The result was very good--not too light, not too heavy, and the apple flavor really stood out. I used tart apples and highly recommend doing so; it adds a little more punch to the flavor. - 7/24/08
