Ingredients

    3 tsp margarine
    0.3 cup apple sauce
    0.25 cup molasses
    1 large egg
    1 cup milk
    1 cup whole wheat flour
    1.5 tsp baking powder
    0.5 tsp baking soda
    0.75 tsp salt
    1.5 cups wheat bran
    0.5 raisins

Directions

cream margarine, apple sauce, and sugar together well. Add milk, and then bran. Combine flour,baking powder, soda and salt together. Add to liquid ingredients. Add raisins, if desired. Place in greased muffin pans. Bake in 400 F oven for 18 to 20 minutes. Makes one dozen large muffins.

    Filling and sweet. I had a hard time finding wheat bran in the grocery store, but once I did, the recipe was quick and easy to make. I doubled the recipe and will freeze some for breakfasts in the future. - 1/20/10
