Ingredients

    1 fresh eggplant, thinly sliced
    2 large tomatoes, slices

Preheat oven to 400 degrees.

Pretty good. I made it as is, but used sour cream instead of yogurt. The garlic salt is what gives the wonderful flavor. Cubing the vegetables might distribute the flavor a bit better versus slicing. - 9/22/08

Was looking for a simple Baked Eggplant Recipe!!
We all LOVE feta....so this is great.
I used a bit more feta on 1/2 of it for the rest of family.
    Thanks.

This dish is phenomenal, I gave it a try as I had all the ingredients on hand and had never cooked an eggplant before. All I can say again is that it's amazing :) I did use sour cream instead but it would be just as good with the yogurt.

This was delicious! I didn't have any feta cheese, so next time I will be sure to try it that way. Instead, I had FF shredded cheddar. - 7/28/09

I really enjoyed this, thought it had a fantastic flavor! My husband is not a fan of eggplant, and alas, this did not bring him over to my side. But it really was delish. - 9/6/08

Great recipe! Easy to make. I put a little Greek seasoning on top. I couldn't believe how fabulous the baked yogurt topping was on this! Might try adding Boca crumbles. - 6/26/08

I didn't have yogurt or sour cream, but I made it anyway. I used a mandoline to slice my eggplant very thinly but my tomatoes weren't firm enough to mandoline them. I also added a bit of Greek seasoning.

Nice flavors and relatively easy to make.

Made this last night for dinner and made a good side dish. Layering the eggplant and tomato slices made a very attractive dish. There was a bit of liquid in the dish so use a slotted spoon. - 8/20/12

YuM! I threw in some zucchini in those layers but really you could put almost any sliced vegetable in it! - 4/23/12

would this recipe be good without adding the yogurt or sourcream? How about using colby or cheddar? - 7/19/11

This was good. I substituted sour cream for the yogurt because i could not find a small container of plain yogurt. I will probably make this again. I agree with another reviewer that a chopping of the vegies might work better. - 8/24/10

This was excellent. I used low fat sour cream and a little taco cheese I had sitting around. Next time I'll try the feta because I think it would give it that extra kick. Also added black beans which worked nicely! - 8/17/10
