Introduction

Number of Servings: 8

Ingredients

    350 grams of couscous (1 box)
    16 apricots (peeled and thinly sliced)
    1 small cucumber (peeled and diced)
    1/2 cup pine nuts (lightly toasted) *see note
    1/4 cup extra virgin olive oil
    2 tablespoons fresh squeezed lemon juice
    1/2 cup fresh parsley (chopped) - you can also use fresh chopped mint which adds a nice flavour
    Dash of salt and pepper to taste.



Directions

Meks 8 large servings

Cook the couscous in a medium sized pot as per package instructions.

Transfer the cooked couscous to a bowl, fluff to seperate the grains and cool to room temperature.

Add all the remaining ingredients and gently toss to combine the flavours.

Cover and keep refridgerated until ready to serve.

Note: to toast the pine nuts, place in a single layer in a small baking dish. Bake, shaking the dish from time to time in a 350 degree oven for about 10 - 15 minutess until they are lightly toasted.
