Ingredients

    3 tbsp olive oil
    3 tbsp chopped onion
    Salt and Pepper
    1 cup rice
    2 cups chicken broth

Directions

Heat oil in pan over medium heat. Add onion and cook until onion is soft. Add in rice and stir for 3 minutes. Add broth, salt and pepper to taste and simmer for 20 minutes covered.

    I love rice pilaf! I made some for dinner last night by cooking brown rice in fat free reduced sodium chicken broth and then adding canned peas (I was out of frozen) once the rice was cooked. I even sprinkled 1/2 piece of bacon on the top since I had extra calories to spare. - 7/4/07

    made this to go with boneless chicken tonight, needed something quick and easy, this was very yummy, I put in some red pepper to go with the onion because that was all I had but I am definitely going to make it again with other veggies, my daughter wants to make it with spinach and orzo, yummy - 5/12/11

    This was really good. I had to add extra broth but I used fat free so it didn't change calorie content to much.I used olive oil spray instead of the oil I also added a cup of peas and 3 tbs of bell pepper. - 8/4/07
