Number of Servings: 1

Ingredients

    1 Frigo light string cheese (or other brand)
    1/2 cup Fiber One cereal, crushed (may also use Panko bread crumbs)
    1/4 cup Egg Beaters
    1 tbsp Italian seasoning, to taste
    Salt and pepper, to taste
    Tomato sauce (optional, not included in nutritional info)

Directions

Preheat oven to 375 degrees. In a food processor
or blender, grind Fiber One to a breadcrumb-like consistency. Place crumbs in a small
plastic container with a lid. Season crumbs with
as much salt, pepper, and Italian seasonings as you like. Set aside.

Cut cheese sticks in half, so that you have 2 sticks. Place sticks in a small bowl, and
pour egg substitute over the top of the sticks.
Swirl egg substitute around so that it thoroughly coats the sticks. One by one, transfer
sticks to the container with the crumbs. Cover
container, and give it a shake to coat the sticks in the crumbs. Carefully return sticks to
the dish with the egg substitute, and coat them
again. Next put sticks back in the crumbs container, cover, and shake once more to coat (try doing this two at a time the second time around). Place sticks on a baking dish sprayed lightly with
Olive oil. Spritz the tops of the sticks with a quick mist of the spray. Place dish in the oven, and bake for 10 minutes (or until the first sign of cheese oozing out). If desired, serve with warm
marinara sauce. Best when eaten immediately, while cheese is hot and gooey! Makes 1 serving. Nutrition info calculated without marinara dipping sauce.

    To those concerned with sodium, the sodium in the recipe is so high because it includes three dashes of salt. If you do not add extra salt, the sodium is 420 per serving (and that is assuming all of the EggBeaters and FiberOne get used, which I'm guessing would not be the case.) - 12/17/08

    I used the Uncle Sam's cereal (since it has flaxseed) and ground it up really fine. It was soooo good!! It was a little messy to make, but that was more my fault than the recipe. Will definitely make them again!! - 6/30/08

    I love the ingredients separately, but I didn't really like them together. It was easy to make, and the texture & appearance approximated mozz sticks, so it's worth a try with bread crumbs. I used egg whites and went heavy on the italian spices, so sodium wasn't a problem for my recipe. - 7/28/09

    My daughter & I just made (a modified version of these) & they were GREAT. Made w/ ground (ranch flavored) kashi crackers, parm cheese, onion & garlic powder. Much lower sodium. No need to add any salt!! - 6/30/08

    This sounds very good. I edited it a little. I made the recipe for 4 servings by adding a total of 4 cheese sticks, added some marinara sauce into the nutrition info, took out the salt, and used egg whites instead of egg substitute. The nutrition info changed to less carbs and more protein. - 4/5/11

    Love them I made them before and found they are better when I reheat in my toaster oven so I make extra and they are a handy snack in the freezer for a quick snack, lightly defrost a few and toss in toaster oven and hit toast a few times... - 4/4/11

    Delicious!! This much crumbs/egg whites makes a lot of sticks, since the amount per stick is really negligible. I did two sticks worth, and measured and still had almost as much crumbs and egg whites as I started with. - 3/2/10

    DELISH but I wish the recipe made more than two sticks. I used 3 sticks and cut them in half, and used the same amount of breading mix. I used special k cereal, YUM! I also mixed some steak seasoning w/ italian by accident. YUM! TRY IT! Egg beaters cost too much, so I used 1 egg. YUMMMMM! - 8/14/09

    These were excellent! BTW, since nutrition info is based on all the crumbs and egg being used (they're not) and since light cheese sticks are only 60 calories, the calories on these are MUCH lower. Excellent way to cover cheese stick cravings! P.S. Using container for crumbs really helped!!! - 7/20/09

    I don't understand why anyone would not know what something is: we're on the internet, search for what you don't know!! I would highly encourage everyone to use a high fiber cereal for the coating-- you want to counterbalance the higher fat in the cheese, with a carbohydrate high in fiber. - 12/17/09

    I don't think that anything with this much sodium per serving can be considered "healthy". It sounds delicious, but for those who have high blood pressure it is definitely on the "do not eat" list. - 6/28/08

    the ingredients details link that you can click on, on the right hand side, said 1 oz., and she said 1 frigo cheese, so it sounds like it is just one stick. you break it in half, so maybe you need half a cup of crumbs and 1/4 cup of egg beaters (equal to 1 egg) to cover just the 2 cheese halves. - 6/27/08
