Introduction

This is a fantastic way to sneak veggies into your kids. I HATE cauliflower and cabbage and I love this soup. Very little prep time, 4 ingredients, and <1 gm of fat.

Number of Servings: 9

Ingredients

    1 head of cabbage (about 10 cups)
    1 head of cauliflower (slightly larger than cabbage, about 10 cups)
    Enough low sodium chicken broth to almost cover veggies (about 6 14.5 oz ,cans for 20 cups of veggies)
    1/4 cup, or less, blue cheese crumbles
    freshly ground black pepper to taste- lots!
    optional: up to 1/2 cup roasted red pepper

Directions

Chop cabbage and cauliflower and place in Dutch oven or large pot.

Pour enough chicken stock to ALMOST cover.

Bring to boil, then simmer, covered, until very tender, about 60-90 minutes.

Remove from heat and stir in cheese and pepper. (and red pepper, if using)

Puree in blender, processor or in pot with hand blender. Taste to adjust seasoning.

Makes about 9 2-cup servings. Note: freezes well.

    I halved the recipe since I'm the only one who likes cauliflower in my family. I sauteed my cabbage first in some sesame oil (about 2 tsp) to give a roasted flavor to it. I also threw in 3 cloves garlic and fresh ginger (1 tbsp) while it was simmering. I left out the blue cheese. It was quite good. - 1/26/09

    Your tweaks sound yummy. Because it is easiest for me to use a whole head of cabbage & cauliflower, I just freeze the remaining soup. It lasts several months in the freezer in a good quality container.

    Loved this soup! I rarely make a recipe without changing something, but I'm sure glad I didn't on this one. I used my homemade chicken broth and one wedge of Laughing Cow blue cheese. Pureed up so smooth and delicious, will be making this many, many more times. Thank you for sharing. - 2/11/11

    I LOVE soups, and this is a new fave. I added too much pepper (I took the "lots!" too literally I guess) & I forgot the roasted red pepper, but this was delicious. I'm looking forward to getting hungry again so I can have some more! p.s. I think it would still be great w/o the blue cheese! - 1/15/09

    This soup is absolutely AMAZING. It has a creamy mouth-feel, and is such a light flavor that I can see it being the "cream" base for many different soups (healthy clam chowder, anyone?) The second day, I added some steamed sweet potato and nutmeg (yummmmm-o!) - 11/19/10

    Fabulous! I made this for Christmas Dinner and my guests have all asked for the recipe! (It's a hard decision--do I let them know how easy and healthy it is? Or let them think I slaved for hours over an indugence?) Good with Asiago instead of blue cheese too! - 12/30/09

    I think I put in too much blue cheese but otherwise this was a great soup. I also put in a package of soft tofu to add extra creaminess and increase the protein. - 2/10/09

    I really liked this soup! Thank you for sharing the recipe! If I hadn't cooked it myself, I would have never known that the base of the soup was cauliflower & cabbage! It really tastes like a cream based soup mmmMMM I definitely recommend this recipe! - 8/3/08

    We really liked this (made with roasted red pepper as described). Only issue is that it's too LOW calorie for a lunch on its own - I will add some silken tofu next time to bulk it up a bit. If you need to add calories, could also add some potato to help bulk it up. Tasted great! - 11/8/09

    I tried this recipe w/ the following modifications: no red peppers, no cheese (can't have dairy or soy), add basil, fresh onion, fresh garlic & parsley; served up a bowl & put some Earth Balance Natural Buttery Spread in (non-dairy, non soy)...very yummy! Might try w/goat cheese or butternut squash - 6/17/10

    You are right this soup is great!
    I added a cup of cannelini beans (fresh), 1/2 cup finely copped parsley and 1/2 cup leeks. Very hearty & delicious.
    I also sauted garlic & onion in the beginning.
    I put everything in the slow cooker and let it do it's thing for 6 hours. :)

    Really easy. I had everything on hand except the blue cheese, so I substituted feta. I was tempted to add onion, but decided I'd stick more closely to the recipe, and my family loved it just the way it was. I will be making this again.

    Just made this soup and it is great! I added some celery and onion while it was cooking, also added garlic and Mrs. Dash, Forgot to add the blue cheese so had to add after, but could of left it out since it tasted great without. Will definitely make this again. Great for a "low cal" snack . - 4/30/12

    I added a small potato and omitted the bleu cheese, as I didn't have any. Didn't do the red pepper either. Just a good basic soup that's low calorie enough to accompany a sandwich for lunch. - 10/23/10

    This was really good. I added too much blue cheese at first and it tasted bitter but adding some grated parm cheese balanced the flavor out really well. Thanks for the great low-cal recipe! - 3/17/10

    This was okay. I hate the smell of cabbage cooking, and when I fixed a bowl this morning to bring to work, I could still smell the cabbage. I'll eat it for lunch a few days this week, but I probably won't be maikng this one again. - 10/26/09

    Unbelievably delicious. I halved the recipe. Used Cheddar instead of Blue Cheese. Seasoned with Tastefully Simple Onion Onion, Turmeric, Mrs. Dash Spicy Blend, and Red Pepper Flakes. So good and easy to make. Thank you. - 3/14/16

    I have never made anything with cauliflower nor had any cauliflower soup before but due to a gallbladder surgery needed to find a low fat meal. Wow. Super amazed at how this tasted.     Fantastic soup! I don't like blue cheese so I used feta instead (and used 1/2 cup). This soup is very flavorful and surprisingly low on calories, fat, and carbs.     The chilis I used was a half can of chipotle chilis in adobo sauce. Chopped & seeds removed. I added salt and about 4T. of butter. Not really that many extra calories given how many servings it makes. I thought it was well worth it. It was delicious! - 9/16/11

    good, i think i used a little too much broth but this was still very very good! thanks for the recipe! I made this a second time with purple cabbage. it was CRAZY. If you have kids that might be a good way to get them to eat veggies. MY BF said it looked like a dr suess food. - 10/4/09
