Is it really only 81 calories for a 2c. serving?
I have never made anything with cauliflower nor had any cauliflower soup before but due to a gallbladder surgery needed to find a low fat meal. Wow. Super amazed at how this tasted. Never would have ever guessed how much I liked it. I only halved the recipe but wished I hadn't!! Love it.
Holy moly, this was so much better than I ever expected it to be! I'm no gourmet -- quite the opposite, to be honest -- so anytime I can follow an incredibly easy recipe and end up with a delicious, low-calorie meal, I'm absolutely blown away! Thanks for the recipe!

Absolutely, delicious!!! I used 1/4 cup Parmesan cheese shaves because its has less calories than blue cheese.

Fantastic soup! I don't like blue cheese so I used feta instead (and used 1/2 cup). This soup is very flavorful and surprisingly low on calories, fat, and carbs. I'm having this for lunch this week along with some baked chicken. This will definitely be added to my rotation. Thanks for sharing!
The chilis I used was a half can of chipotle chilis in adobo sauce. Chopped & seeds removed. I added salt and about 4T. of butter. Not really that many extra calories given how many servings it makes. I thought it was well worth it. It was delicious!
I added a small potato and omitted the bleu cheese, as I didn't have any. Didn't do the red pepper either. Just a good basic soup that's low calorie enough to accompany a sandwich for lunch.
We really liked this (made with roasted red pepper as described). Only issue is that it's too LOW calorie for a lunch on its own - I will add some silken tofu next time to bulk it up a bit. If you need to add calories, could also add some potato to help bulk it up. Tasted great!
I think I put in too much blue cheese but otherwise this was a great soup. I also put in a package of soft tofu to add extra creaminess and increase the protein.
