Introduction

This is a delicious and vitamin packed pasta salad. A great summer dish that I often take to picnics. People always ask for this recipe and even my teenagers love it. Number of Servings: 12

Ingredients

    Dressing:
    1/2 cup peanut butter (smooth)
    1/4 cup soy sauce (low sodium)
    1/3 cup warm water
    2 tblsp. chopped fresh ginger
    1 medium clove garlic
    2 tblsp. white wine vinegar
    1 1/2 tsps. honey
    1 tsp. dried hot red pepper flakes

    * you can add a tblsp. of asian sesame oil to the dressing for taste, but it's still good without it (calories not included in the recipe).

    Noodle Salad:
    3/4 lb. linguine fini or spaghetti
    4 scallions, thinly sliced
    1 red & 1 yellow bell peppers cut into 1/8" thick strips
    1 cup of sliced carrots

    * sometimes I add extra firm cubed tofu and sometimes I add a couple tblsp. of sesame seeds. (calories not included in the recipe)

    Makes 12 1 cup servings

Directions

Cook the pasta until done, rinse in cold water. Add pasta to the noodle salad ingredients and toss.

Puree the dressing indgredients in the blender for 2 minutes, until smooth. Mix well with the noodle salad.

Enjoy!!

    Really tasty and easy. I added broccoli slaw, red cabbage and more red pepper and peanut butter than recipe calls for, though. Really good! - 6/28/11

    Very Good
    I liked it as is and my honey liked it too and he doesn't like Asian food. But I think it needs more peanut flavor so will add more next time. Could use more veggies too so will try adding broccoli slaw too. I think I'll try rice wine vinegar for more authenticity. - 2/13/15

    OK this was just YUM-OH! I'm bringing it to work tomorrow for a Chinese Pot Luck we are having. I added a bag of brocolli slaw, sliced red pepper and scallions for the veggies. I also increased the dressing, used balsamic vinigar and bottled hot sause VS. using white vinager & red pepper flakes. - 9/22/11

    I used some frozen green beans with baby carrots for the veggies and it was still good! I can't wait to make this again with some broccoli and cabbage. I had to change a few things in the dressing, (ginger powder for fresh and ground red pepper for the flakes) but it was still amazing. - 7/5/11

    Forgot the sesame oil and seeds, but was still really tasty! Think next time I may used broccoli and green beans. Yummy and pretty easy! BTW I used 1/2 a box of spaghetti noodles to make 1 lb. - 10/5/10

    I liked this, but was hoping it would have a more peanut taste. I made it according to the directions. If I make it again, I will add more peanut butter and use rice wine vinegar. Would also be good with more veggies and shrimp. - 4/28/10

    This was wonderful! I couldn't even wait for it to be cooled to eat it. A little bit spicy, but I loved the combo of the soy sauce and peanut butter. Comes together quickly too. - 1/9/10

    Ooooo... SO very delish! I made some for a Saturday night potluck. Not a lot of peanut fans in the crowd, so lucky me... I got to bring some leftovers home to enjoy this week. (Those that tried it, loved it, though.) I used the Naturally More peanut butter brand for a healthier dish. - 7/19/09
