Number of Servings: 8

Ingredients

    chicken breast, boneless, skinless, 6oz.
    black beans, no salt added, 15oz can
    pinto beans, no salt added, 15oz can
    corn, no salt added, 15oz can
    tomatoes, diced, no salt added, 15oz can
    tomato sauce, no salt added, 8oz can
    brown rice, 1 cup, uncooked
    water, 1 cup
    McCormick Salt Free All-Purpose Seasoning, 1 tsp (or use your own seasonings)
    black pepper, 1/2 tsp

Directions

Cut chicken breasts (or tenders) into 1/2 inch cubes (I use kitchen shears).

Drain and rinse black beans, pinto beans, and corn.

Place all ingredients in Crock Pot and stir.

Cook on High 2 hours.

Stir.

Cook on High an additional 1 to 2 hours, or until chicken is cooked.

Serve.

    I cooked this for 6 hours on high and the rice still wasn't done. Next time I will pre-cook the rice. Otherwise, this was a good recipe. - 5/9/10
