I think it needed a bit more seasoning, but the ease of the recipe and the time it takes to cook make this an excellent dinner choice if you're short on time. I did add onion, garlic, and pepper; substituted chicken broth instead of water. Hubby liked it. - 5/7/10

Made with cornbread stuffing mix. Topped with spaghetti sauce, yum. Pretty sure these would make decent and easy little meatballs for a pasta dish. Didn't think they were dry at all...will definitely make again! - 3/23/10

These were great! I actually cut the recipe is half. I used 1 lb of turkey, 1/2 bag of Stove Top Reduced Sodium, 1/2 cup of water, and 1 egg white. I added 1/2 a chopped onion and 1 stalk of chopped celery b/c people had stated it was a bit dry. It filled 9 muffin containers. Each muffin was 3oz. YU - 8/1/11

This was delicious! We were a bit surprised over how spicy they were due to the red pepper flakes, a nice surprise since we both like spicy foods. - 2/27/11

Delicious and so easy! All 3 of my kids liked these mini meatloaves. My husband loved them as well and was highly impressed! I've made them twice already and they are on this week's dinner menu! - 1/2/11

I've made this recipe for years using only 1 pound of turkey. I've used a 20 oz. package before and found it too dry. I too use Egg Beaters and like to use seasoned Stove Top for more flavor. These freeze great for quick lunches/dinners too! - 7/12/10

This recipe was a life saver! I have been jonesing for some good meatloaf the last few weeks, but wanted something healthy, filling, and EASY! This fit the bill! Healthy? You bet...164.5 calories per serving? Filling? Oh yeah...I had WLS in January, so one meat muffin was PLENTY. Easy? Absolutely! - 5/21/10

I added Red Onion to it and sprinkled it with Garlic, and salt and pepper. Also instead of water I used Chicken Stock, and they came out really good. My picky son loved them. - 8/28/09

I loved it. It was so easy to make and with a busy family, it freezes well for quick meals on the run. I would also be inclined to add celery, onion and grated carrot (for colour). Thanks for this one. - 3/31/09

I really did enjoy this meatloaf, and, must tell you that a
friend of mine who eats terribly even enjoyed it. Also I've tried this using different flavored stuffing and it is
wonderfully delicious. Thanks so much for this recipe.
