Ingredients

    3 Eggs
    2 cups of Splenda
    2 tsp Vania Extract
    1 cup Canola Oil
    2 cups Grated Zucchini
    3 cups White Flour
    1 tsp Baking Powder
    1 tsp Salt
    1 tsp Baking Soda
    1/2 cup Raisins
    1 cup Crushed Pineapple

Directions

Mix ingredients well. Pour into non-stick bread pans or mold. Bake for one hour at 325 degrees. Let cool before serving. Makes 12 slabs

    Wow, I am waiting to hear about the 2 cups of Splenda before I take on this recipe. - 8/23/08

    We really did use Splenda at 2 cups as a replacement for sugar. I'm not sure what's so bad about Splenda. It's the artificial sweetner that has the best reputation healthwise ( I know, I've done the research) and it's easily usable in baked goods.

    Substitute all the oil except for 2 T for buttermilk and lower the sugar or splenda by a half cup at least and the calories would be a ton lower. Whole wheat would certainly boost the fiber and not to mention the taste. - 8/22/08

    I really used this as a method for using the recipe calculator and sharing it with family members so they didn't have to type everything again. When is use the entry method on sparkPeople, even when I share it they can't find it.

    My experience with the "baking" splenda is that it's not as sweet as the packets, and even when I have used the amount asked for in recipes,it never turns out sweet enough.I think that was always with recipes that had baking chocolate in them. I only have splenda packets,and don't want to use 2 cups - 8/21/08
