Introduction

Ingredients

    1 cup flour
    1 cup cornmeal
    3 T sugar
    1/2 tsp salt
    1/2 tsp baking soda
    1 egg
    1 cup reduced fat sour cream
    1 stick butter melted
    1 can (15-1/4 oz) whole kernel corn, UNdrained
    1 can (14-3/4 oz) cream-style corn

Directions

Combine the first five ingredients in a large bowl, set aside. In a small bowl, whisk egg, sour cream, and butter. Stir in corn. Stir into dry ingredients just until moistened. Bake @ 350 for 30-35 minutes (test with toothpick for doneness)in a 9x13x2 pan coated with cooking spray. Serve warm and refrigerate leftovers.

    Delicious! I used blue corn meal and only 1/3 cup of sour cream and increased the sugar to 1/3 cup. Baked in a 9x13 pan it is enough for 18 servings. - 6/20/14

    This is my kids' favorite Thanksgiving dish! I make it in an oval casserole and use Jiffy mix instead of the first 5 ingredients. I also think that claiming 20 servings is a significant stretch - I'd say 10 at most. It is deeelish - I have to be careful around it! - 10/22/11

    I have a recipe much like this. I use a box of Jiffy Corn Bread mix instead of the cornmeal. This is like eating dessert. I make mine in a deep pie pan. It only makes 8 servings. Worth the splurge. Fix it when you know you're having a crowd, so the leftovers won't call you. Very moist & delicious. - 2/2/10
