Introduction

Tofu is high in protein and calcium, low in fat and sodium, and cholesterol-free.

Ingredients

    1/2 medium onion4 - 5 mushrooms, slicedsplash of olive oil1 12-ounce pkg firm tofu, crumbled1-2 tsp curry powderpepper (to taste)salsa (to taste)2 stalks green onions, shopped

Directions

1. In a large saucepan, add the onions and mushrooms to a splash of oil and saute on medium-high heat until the onions are translucent. Crumble tofu and add to saucepan. Add the curry and pepper. Sauté 10-12 minutes until moisture has evaporated. Add salsa and green onions and scramble on high heat for 2 to 4 minutes.

Note: you could also add any other veggies you have kicking around.

Makes 3 servings (approx 4 oz each.)

    I am slowly coming to accept that tofu can taste good if it is sufficiently smothered and disguised by other foods. This is such a dish. - 2/3/09

    I made this for our suppe last night. My wife thought she was having a vegetable/scrambled egg dish...until I finally told her it was tofu! I added chopped celery & bell pepper, just a pinch of curry for the color and light flavor. A very tasty dish. The leftovers are good for this A.M. meal. - 2/5/08

    Delicious. Cooks quickly, so learned (the hard way) that we need to have all the food ready to cook before turning on the heat. Will try cooking the salsa with the rice next time around. - 8/31/07

    This would be good with eggs in a tortilla! Rotel and Ms. Dash definitely makes it more flavorful. Jalapeños is also a nice addition if you like them. - 8/7/08

    Yummy!! I used Rotel Tomatoes and green chili for my salsa! Added little salt. Placed in a torilla with soy cheese! Yummy! My kids loved it! I have had something like this before and it did not have great flavor but this did. Instead of green onions I used black olives. - 4/10/08

    Great source of protein for breakfast or a snack. Simple & quick to make. I added Mrs. Dash pepper seasoning (about 1/2 tsp) after reading the comments. I think I will add a little swiss cheese to the scrambled tofu when it's nearly done the next time I make it. - 1/1/08

    This is the kind of dish you can make with any veggies looking at you sadly from your refrigerator. Use 'em up! Adding turmeric and mustard powder makes the tofu look even more like scrambled eggs. - 8/17/11

    I read the other comments and did change it a bit. I used the Rotel and added black beans. I served it in flour tortillas. It was excellent. Very filling. It makes a lot, though. I only needed to serve two. - 2/8/12

    I loved this recipe! It was my first time making tofu ever! I added red peppers and altered the recipe slightly by placing it on a small four tortilla with a sprinkle of feta cheese and fresh spinach! Delicious! - 7/12/11

    For tofu, this was great! I used scallions, cumin, curry, yellow pepper & celery; served diced tomatoes on the side. I ate it on thin corn tortillas and other family members put it into pitas. Even super picky DS said it was great and he normally complains about tofu! - 1/8/10

    I changed this recipe up, and I loved it! I used grape tomatoes, mushrooms, corn, and black beans. I spiced it up with cumin, paprika, and red pepper along with the salsa. I didn't use any salt, and it still tasted very flavorful. Very yummy for any time of the day! - 4/13/09

    Finally! Something good out of tofu! I used portabella mushrooms and green bell peppers. Also added garlic. I didn't have any salsa so I used a little canned tomatoes with basil and oregano, and a splash of tabasco. Will definitely make again. - 3/19/09
