very good recipe as is. Tofu is great for protein and I enjoy the consistency since I'm a big texture person~
I changed this recipe up, and I loved it! I used grape tomatoes, mushrooms, corn, and black beans. I spiced it up with cumin, paprika, and red pepper along with the salsa. I didn't use any salt, and it still tasted very flavorful. Very yummy for any time of the day!

THIS SOUNDS VERY TASTEY, AND THE FACT THAT IT DOES NOT HAVE CHOLESTERAL AND IS LOW SODIUM IS A PLUS AS I HAVE HIGH CHOLESTRAL AND AM ON LIMITED SALT ALSO.
Yummy!! I used Rotel Tomatoes and green chili for my salsa! Added little salt. Placed in a torilla with soy cheese! Yummy! My kids loved it! I have had something like this before and it did not have great flavor but this did. Instead of green onions I used black olives.
Great source of protein for breakfast or a snack. Simple & quick to make. I added Mrs. Dash pepper seasoning (about 1/2 tsp) after reading the comments. I think I will add a little swiss cheese to the scrambled tofu when it's nearly done the next time I make it.
