Introduction

Chick peas are a great source of fiber! Chick peas are a great source of fiber!

Ingredients

    1 16-oz. can garbanzo beans (or chickpeas), drained1/4 cup chopped parsley1 medium tomato, cored and chopped1/4 cup sliced ripe olives2 tablespoons olive oil1 teaspoon ground cumin1 clove garlic, minced1 tablespoon red wine vinegar1 teaspoon dry mustard

Directions

In medium bowl, stir together beans, parsley, tomato and olives. In a small bowl, whisk together remaining ingredients until well blended. Toss dressing well with beans. Cover and refrigerate until serving.

Serves 6 (approx 4oz per serving.)

    Not a huge fan of parsley. I made another with fresh cilantro and thought it much better....but that's just my taste :) - 2/10/08

    I added 1/2 tsp. cilantro, 1/4 cup chopped red onion, 1 tsp. lime juice, and fresh cracked black pepper, served it over Romaine lettuce with sliced avocadoes...pretty good, I thought. You could add a sliced boiled egg and call it a meal. - 11/17/07

    I'll make this for sure. I'll leave out the olives and instead add celery. It's like a 3 bean salad I make. - 2/9/08
