Introduction

These muffins have oat bran and whole wheat flour, which up the fiber content. They also use crushed Kashi Autumn Wheat cereal and apple sauce to keep them moist! Ingredients

    3- 3.5 Medium bananas, mashed
    1 Egg
    3/4 c. Unsweetened apple sauce
    1/2 c. Sugar
    1 tsp. Salt
    1 tsp. Baking soda
    1/2 c. Crushed Kashi Autumn Wheat cereal (it takes about 1 cup cereal to yield 1/2 cup crushed)
    1/2 c. Oat bran
    1 c. Whole Wheat Flour

Directions

Mash the bananas thoroughly and combine with the egg. Stir in apple sauce, followed by the sugar, crushed Kashi Autumn Wheat, and Oat Bran. Mix together the flour, salt and baking soda, and add these dry ingredients to banana mixture. Divide into muffin tin and bake at 350 degrees for 30 minutes.

Makes 12 muffins.

    Love these! I always add vanilla and cinnamon, plus extra ingredients if I have them: not-so-fresh blueberries, chopped dried apricots, etc. I don't bother to crush the cereal; I just mash it into the bananas with a potato masher. Yum! - 2/18/13

    Very good - light, moist and delicious. I added the recommended vanilla and also some chopped walnuts. They do not rise much. - 3/3/09

    These are great! I add 2 tsp vanilla and .5 tsp cinnamon. I've become addicted to these and make double batches to freeze and eat for breakfast for a few weeks. I just take one out the night before, put it in a plastic container to take to work, and eat it the next morning. Yum! - 2/21/09

    I substituted 1/2 cup ground flax seed for the oat bran. I aslo cut out the 1/2 cup of sugar and used low sugar applesauce. This makes a great breakfast muffin and snack anytime of the day. - 1/19/09

    Fantastic! I didn't have everything so I substituted 1/4 c more apple sauce for a banana. Organic Flax Plus Multibran Cereal for Kashi Autumn, and 7 grain flour for Oat bran. My nutritional info has changed but is still a filling/nutritious choice. Yum! - 1/19/09

    Very good muffins, but the whole wheat flour is not listed in the Ingredient Details from which the nutrition info is calculated. I believe the calorie count would be around 125 or so, but don't know how much it might affect the fiber. - 9/30/08
