Introduction

This is a quick and easy meal that my family loves. This is a quick and easy meal that my family loves.
Number of Servings: 8

Ingredients

    1 lb ground sirloin
    1 small onion diced
    1 14.5 oz can petite cut tomatoes
    1 11 oz can Green Giant niblets corn
    1 15 oz can bush's seasoned black beans
    1 cup diced carrots
    Salt and pepper to taste

Directions

In a large skillet, brown ground sirloin. Drain and rinse to remove excess fat, and return to skillet. Add onions and season to taste. When onions are soft, add all the other ingredients, cover and let simmer until the carrots are cooked. Serve with brown rice or noodles. Makes 8 1-cup servings.

    This was a big hit with all 8 people at my house the first time i made it! I am going to be making it again tonight. I will have to double the recipe because even the picky kids wanted more! I love when I find recipes everyone loves! I added home made taco seasoning to it. - 1/29/10

    Great recipe! I used home made salsa in place of tomatoes. The only other change I would make is that I would halve the recipe next time. There are only two of us. - 10/12/15

    spiced it up with ground chili pepper, red potato, and mixed vegetables instead of just corn. Also added a can of tomato paste to thicken and used two pounds of frozen garden tomatoes. served as a stew. - 6/12/14

    Very good base recipe. We added black bean & garlic sauce from the Asian market & a splash of wine. Some shredded cheese on top & a tortilla on the side. My son & husband went back for seconds so unfortunately no left overs. - 7/1/12

    I recalculated the ingredients and noticed that you have 3 cups of black beans - 1 can is only 1.75 cups of beans - did you use 2 cans if not the calories are only around 155 per serving - always looking for a good low calorie recipe - will be making it soon. - 7/8/08
