Introduction

Number of Servings: 4

Ingredients

    1 can cream of chicken soup
    1/2 cup skim milk
    1/2 cup cooked carrots
    1/2 cup cooked string beans
    1 1/2 cups cooked noodles
    8 oz cooked diced chicken breast
    1 Tbsp diced onion
    1/4 tsp pepper or to taste
    1/2 cup bread crumbs

Directions

Blend soup and milk in a casserole dish. Mix remaining ingredients, except crumbs, together with blended soup mixture. Top with crumbs.
Bake at 400 degrees for 25 minutes. Makes 4 servings.
*I sometimes use canned green beans if I have no fresh beans and I often stir a bit of Parmesan cheese into the mixture in the casserole just to give it even more taste

    You can make cream sauce with Lactose free soy or regular milk and some chicken stock and poultry seasoning instead of the canned stuff. Less sodium, too. - 12/3/08

    i loved this recipe even though my husband thought it was a little dry, but one can add up 1 tbsp olive oil to the mix and it would make it tastier. - 11/3/08

    Thanks for the nice comment. If you found it a bit dry, more milk could be added instead of olive oil.

    This will be very good tonight. I started the chicken breasts in my crockpot with onion soup mix and water. Cooked them on high a couple hours. Cut the chicken and added the rest to the crockpot and cooking 1 more hour. - 9/16/10

    Tip: Use cornstarch & follow the recipe to make white sauce for any "cream of" soup replacement. Lower sodium, too. - 11/12/08

    skipped carrot and green beans actually since I don't care for either and instead added broccoli, peas and mushrooms. used less bread crumbs so i could add some cheese! this recipe can be very versatile, it was great! - 11/10/08

    I used too much soy sauce cooking the chicken, so ours was a bit too salty... Next time, I will just mildly season the chicken. VERY GOOD and excellent portion sizes for calories! - 12/5/08

    This sounds great. But I usually do not use canned soups, I usually make my own (Saute onion in olive oil then grate potatoe in to pot with vegetable broth. Bring to boil, simmer with in this case grated chicken breast).

    never realized that the "cream" part of the soup was what was added not in the ingredients in the can..thanks i will make it with lataid milk - 11/12/08

    Ohhh, I'm lactose intolerant too but I still use the soup & put my own Lactaid milk in it. Would that much soup bother him? If it would, I don't know off hand what else you could use, perhaps someone else would have an idea. Good luck with that! I'll be watching for a reply too :-)

    Glad you liked it, it is one of my favorites! What you could do another time is when you have a chicken supper, save some of the cooked chicken for making the casserole, that saves time and you could used rinsed, canned vegetables. Also, I've actually cooked the carrots in with the noodles!

    This recipe sounds very appetizing, my only problem is that I don't like cooked carrots. I love them raw though. So what can I do as far as the carrots are concerned, can they be left out? - 11/6/08

    You should be able to substitute a vegetable that you prefer. Just try to add one that has about the same nutrient & calorie value. With most casseroles, I put in whatever veggies I like or have on hand, it seems to always work out okay. Hope this helps & thanks for the comment.
