Introduction

Number of Servings: 4

Ingredients

    1.5 lbs boneless chicken breasts , cut into bite-size pieces
    1-2 tablespoon olive oil (I used one tbsp.)
    1 garlic clove , crushed
    1/4 teaspoon ginger
    3/4 teaspoon crushed red pepper flakes
    1/4 cup unsweetened apple sauce
    1/3 cup light brown sugar (I used plain Splenda)
    2 tablespoons ketchup
    1 tablespoon cider vinegar
    1/2 cup water
    1/3 cup soy sauce
    1 red bell pepper, diced
    1 onion, diced

Directions

Serves 4

Heat oil in a large skillet.

Add chicken pieces w/ pepper & onion and cook until lightly browned. Remove chicken.

Add remaining ingredients, heating over medium Heat until well mixed and dissolved. Add chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes. Serve over hot brown rice or Bulgar and ENJOY. Great with steamed brocolli.

    I didn't care much for this recipe. It doesn't taste like bourbon chicken to me, but more like teriyaki. It was ok, but I doubt I'll make it again. - 4/17/13

    I love this recipe and have made it a few times without looking too closely at the nutritional values posted. I realized that the protein was waaay too low for 6 oz. of chicken per serving. Of course when I corrected the amount of chicken in the recipe the calories went up too but I still love it - 11/8/13

    I didn't think it tasted like the chicken you get in the mall food court (at all), but I did think it was good. I might have used 1/2 teaspoon of crush pepper instead of 3/4. - 2/20/13

    This was absolutely awesome! The entire family loved it and little did they know how much healthier it is than restaurant versions!! - The longer you cook it the thicker the sauce gets....no need to add calories with flour or starch. Definately a KEEPER. - 6/16/11

    The perfect sweet and spicy combo! I thought the heat was just right, my fiance thought it was a bit too spicy, so maybe 1/2 tsp of the crushed red pepper would calm it down some. I added a couple of teaspoons of cornstarch to thicken it, and didn't simmer the full 20 minutes. Delicious! - 3/31/11

    Great meal!! I was out of apple sauce and died up two fresh apples instead. I simmered the apples in the sauce and they were tender by the time I served them. The fresh apples were a great addition. I also skipped the oil and just used PAM in its place. - 6/24/10

    Easy to throw in the slow cooker and have a good meal in the evening. Made without the bell pepper. Cut back on the red pepper flakes and added a little more peppercorn. Does have an Asian taste to us. - 3/19/20

    This was really good! And easy to make. I had it over borwn rice with broccoli. I like things spicy so I would probably add more red pepper flakes next time. But it was still REALLY good. This dish is a keeper! - 8/12/12
