Number of Servings: 6

Ingredients

    1 pound boneless skinless chicken breast, cubed
    1 can Del Monte diced tomatoes with zesty green chiles
    1 jar Ragu Light Parmesan Alfredo sauce
    3/4 cup salsa
    1/2 envelope taco seasoning (can add more to taste)
    2 cups fresh mushroom slices

Directions

Spray a nonstick pot with Pam. Add the cubed chicken breast and cook through.
Add the diced tomatoes, salsa, and taco seasoning. Add the jar of Alfredo sauce. Stir well.
Simmer for 5-10 minutes.
Add mushrooms, and let simmer for another 5-10 minutes (until mushrooms start to turn soft).

Serve over rice

    This was amazing!I am not a cook by ay stretch of the word, but thiswas extremely easy, fun to make, and everyone in my family ate it. We did not put green chilli's as my wife does nto like them, and it still turned out very good. Taste even better the next day! - 1/29/09

    It's one of our favorite party dishes but completely different from this recipe. Wouldn't call it Arroz con Pollo. Ours include raisins, black olives, yellow mustard, cilantro, carrots, peas, toasted bacon (optional), garlic, onion, bell pepper... Oh, wow, it's delicious and nutritious. - 5/1/19

    Whole family loved this. Hubby & I both on calorie count couldn't believe the richness and flavor for the few calories per servings. Cooked the chicken with half the packet of taco seasoning, then added other half into sauce mixture. VERY YUMMY - thanks for sharing! - 3/2/10

    I haven't tried this yet, but it sounds wonderful. When I do make this, I will make one change. I will saute the mushrooms before starting the rest of the cooking. I think mushrooms taste better if browned first. Best process: don't crowd. Brown one side, flip, brown the other. - 1/25/09
