Introduction

This simple, filling casserole is certain to be your new favorite breakfast. You can also turn it into mini muffins. This simple, filling casserole is certain to be your new favorite breakfast. You can also turn it into mini muffins.
Number of Servings: 12

Ingredients

    12 ounces breakfast sausage (reduced sodium or low fat preferred), browned
    12 large eggs
    1/4 cup skim milk
    2 c shredded low-fat Cheddar cheese
    1/4 t pepper

Directions

Preheat oven to 375*F.

Mix all ingredients together and pour into a greased casserole dish.

OR

Spray a 12 cup muffin pan and fill each muffin cup evenly.

Bake for 30 minutes. Cool for 5 minutes and serve. Makes 12 servings.

    Delicious and easy! I used 1 16 oz container egg beaters plus 4 eggs, instead of the 12 since I have to watch my cholesterol, and a 9 oz package of Jimmy Dean turkey sausage crumbles for the sausage, and it was awesome! I will be making this quite regularly. - 12/6/14

    Added 1/3 cup of Bisquick batter ans spooned it evenly over each uncooked cup to add 17 calories per muffin and a little top crust. Very nice - hope it freezes well for future breakfasts. - 11/14/10

    I absolutely love this recipe. I added sauteed onions, green peppers to the mix and used whole heavy cream. About 15 minutes into it I drizzled flax seed meal on tops, for texture and then took Organic Blue Agave Nectar and drizzled tops when done and let it sit for a few. My husband raved. - 11/21/13

    Be careful when making this--some sausages are high in carbs. Low-fat cheese can also have hidden carbs and this low carb breakfast might not be the low carb bargain firs thought. - 11/15/17
