Number of Servings: 60

Ingredients

    1 pound chocolate, chopped
    2/3 cup heavy whipping cream
    1/3 cup Bailey's Irish Cream
    Powdered sugar

Directions

1. Place chocolate in a heat proof bowl and set aside. Bring cream to a boil in small pot.

2. Pour cream over chocolate and let sit 1 minute. With a rubber spatula, begin stirring cream and chocolate together in center of the bowl. Gradually incorporate the remaining chocolate and cream for the side.

3. Stir in Irish Cream. Cover and let stand overnight or refrigerate up to 2 weeks.

4. Scoop mixture out into small round balls, about 3/4-inch in diameter. Roll the truffles, individually, in the palms of your hands to achieve a uniform shape.

5. Store truffles in refrigerator for up to 2 weeks and toss them in sugar before serving. (We also like rolling them in white chocolate shavings or coconut!)

I have made these several times. I use dark chocolate chips, fat free evaporated milk and a variety of alcohol depending on the holiday I am making them for. Thanks for the recipe. Everything in moderation! - 4/18/11

I agree with Karolab-traditional truffles(this is a traditional recipe-its not slimmed down!) are no where near good for you. the seving size here is TINY! you can use half and half,or even soy milk, but you may need abit more choc. try using dark choc or sugar-free choc to cut calories even more - 12/14/08

sounds amazing but very fattening,,, can you use half and half or will that make it too thin? - 12/14/08

This sounds awesome. All of my favorite ingredients mixed together and so simple. I can't wait to make it. One question - you did not say what type of chocolate to use. Should it be dark, special cooking chocolate or does it matter? - 12/14/08

i used the semi-sweet baking chocolate. It was Bakers brand.
