Ingredients

    3 Teaspoons Green Curry Paste ("A Taste of Thai" brand recommended)
    1 Can Lite Coconut Milk
    1 lb Cooked Frozen Shrimp
    1 Green Bell Pepper
    1 Medium Onion
    1 Zucchini
    1 Tablespoon olive oil for cooking

Directions

Chop bell pepper, onion and zucchini into bite sized pieces. Saute the shrimp and vegetables in the olive oil until shrimp becomes pink. Add the coconut milk & curry paste and simmer on med/low heat for 10 minutes. Remove from flame. Best served over brown rice.

    Added between 2-3 Tbsp of Green Curry Paste. Also added 3 small cloves of garlic, and some peas (mixed veggies) didn't use zucchini - 5/3/13

    I was hoping it'd turn out flavorful and vibrant like the curries I'm used to here in Berkeley. But the seasonings (and perhaps the curry paste I used) were not great. I even added crushed red pepper but the spice wasn't enough to make it great. :( - 1/7/13

    Yum! added a splash of golden boy fish sauce and hot sauce while I heated up the curry paste, then some carrot, celery, baby corn and bamboo shoots to up my vegetable intake :) - 10/4/11

    I am a vegetarian, so I omitted the shrimp and added extra veggies (various colors of bell peppers and peas). It made a wonderful meal with great flavor! A must try for anyone wanting something "exotic". - 6/27/10

    Sure, just cube some chicken breast and prepare the same way. Also works great with just the vegetables as a side dish with rice.
