Introduction

Ingredients

    1/2 cup applesauce
    2 small or medium bananas mashed
    1 1/2 cup sugar
    2 tsp. vanilla extract
    1/2 cup cocoa powder
    1 1/2 tsp. baking soda
    1/2 tsp salt
    2 cups finely shredded zucchini
    2 cups all purpose flour
    1/2 cup walnut pieces

Directions

Preheat oven to 350 degrees F. Grease and flour an 9x13 inch baking pan.
In a large bowl, mix together the applesauce, mashed bananas and sugar. Add vanilla and cocoa and mix together. Then add baking soda, salt, and zucchini and mix together. Add flour and walnuts and mix together. Spread evenly into a prepared pan. Bake for 25 minutes until brownies spring back when gently touched.

    I seen here that some people find it to cakey. I use 3 baby zucchini and 1 and 1/2 cups flour instead and it turned out fudge like a brownie. - 12/7/13

    I liked these but only used half a cup of sugar and we liked them a lot. We used to do Zuccini Chocolate cake but these are easier keepers. Taste good frozen - 7/30/12

    These are much more like a cake than a brownie - if you saw the brownie photo on Pintrest, do not be fooled. They are not fudgey, but they are pretty tasty for a low-fat recipe. I added some instant espresso to boost the chocolate flavor. I love that they're vegan too :) - 9/3/12

    Excellent. A heavier, dense consistency, which I like a lot. Can't even taste the zucchini, says my non-zucchini eater. I used 1 cup flour/1 cup whole wheat flour. Loved it. - 8/6/12

    So, i tried this recipe and followed it exact, with one exception - I added a little bit of canola oil (Maybe 1/4 a cup) because I was afraid they would be really dry. For a 120 calorie, 2 grams of fat brownie, this was really good. It tasted more like chocolate banana bread, but overall GOOD! - 1/21/13

    This was very good! I often play around with recipes to make them as healthy as possible, but this was already pretty good. Unsweetened applesauce, 1/2 the sugar (rapadura), dk cocoa, 1/2 zucchini & 1/2 yellow squash (I used squash I had frozen but drained excess liquid), some dk choc chips. Yummy! - 8/28/12

    Very yummy! I shredded the zucchini in my food processor, which only has one setting. I thought it wouldn't be fine enough to mix smoothly, but it did. You cannot see or taste the zucchini. I think the taste would depend on the ripeness of the banana. Mine were very ripe, so sweet. Will make again! - 4/2/14

    I think these brownies are delicious. I am a chocolate lover and these are great when I get hit with a craving. I used a little less sugar and a little more applesauce and they turned out great. My family loves them as much as I do so I will definitely be making them again. - 2/5/14

    Good but not great. I used 1c whole wheat flour in place of one of the cups of white flour. I also reduced sugar to 3/4 c and added 18 pkts Splenda. Would try adding 24 pkts next time. 2 ww pts with adjustments. Can sprinkle on 6 T mini choc chips for an additional 1 pt per serving. - 11/18/12

    This is delicious. I used almond flour instead of normal flour and it turned out more of a pudding than a brownie, still tasted good but. Next time I'm going to add an egg instead of the apple sauce to make it less running and more solid - 7/22/13

    Modified the recipe substituting Splenda for sugar and used unsweetened applesauce - came out pretty good, the consistency was not like "normal" brownies, it was more like dense cake or bread.     When I made these, I used 1 medium banana, unsweetened applesauce and 1 12 cups flour. They turned out really great and were fudgey , and moist. These will definitely a favorite in this house.     The recipe sounds wonderful! However, I would change a few ingredients to suite type 2 diabetics a little better. Perhaps substituting the 1 1/2 cups of white sugar with half the brown sugar and replacing the white flour with wheat flour + rice flour or oatmeal. - 8/30/17

    I used Splenda, replace 1 cup of flour with whole wheat flour, added 1/4 cup more unsweetened applesauce and 2 Tbs of coconut oil. Then I baked for 35 minutes instead of 20 and it could have stayed in there longer. I agree that they don't taste a lot like chocolate but are very good! - 5/8/15
