This is a quick recipe to make a low calorie batch of soup to snack on throughout the week.

Ingredients

    Ramen Noodles, Beef Flavor - 1 pkg
    Chicken Broth, Reduced Fat & Sodium - 64oz
    Frozen Asian or Stir-Fry Vegetable - 16oz
    Shredded Cabbage (Coleslaw Mix) - 2.5 cups
    Shredded Chicken Breast - 3oz
    Soy Sauce - 2 tsp

Directions

Bring broth to a boil.
Add frozen veggies and shredded cabbage.
Boil for 10 minutes.
Crush Ramen noodles in the package. Add noodles and seasoning packet to the soup.
Add soy sauce.
Simmer 10 minutes.

Makes a little more than 10, one cup servings.

    I was going to scoff at the use of packaged ramen, until I saw that it serves 10. That helps the calorie, sodium, and fat content. I've been buying the rice and egg noodles in the Asian food section at my store, or fresh noodles near the produce section instead of prepackaged ramen soups - 9/1/13

    made this tonight, surprisingly very yummy! I used 5 cans of broth, 3 cups of cabbage, and 10oz of chicken to feed my family of 6. Seriously only took 20 min. TOTAL to make. Thanks for sharing! - 9/18/11

    My whole famile really enjoyed this, (4 children), and my husband really liked it even though he doesn't like cabbage. I will definitely be adding this to my recipes to make often. I also really like that it makes 10 servings, and doesn't take too many ingredients. Wonderful! - 3/16/11
