Ingredients

    1 tbsp oil
    1 lb xtra lean ground beef
    1 med onion, chopped
    1 cup chicken broth
    1 jar salsa-11 oz
    1 1/2 cups raw minute brown rice
    1 cup ff shredded cheese

Directions

heat oil in pan over med-high heat
add meat, & onion, brown, drain fat.
add broth and salsa, bring to a boil
stir in raw rice,cover and remove from heat.
let stand for 5 minutes
fluff rice, sprinkle with cheese, cover for 2 min
serve

    This was good. Next time I will add some green pepper to it. I used brown minute rice, and found that I had to let it cook a little longer than 5 minutes to get the rice tender. - 1/30/09

    I made this last night for my husband and myself. It was delicious! And super easy to make too! My husband isn't even on a diet and he really liked it too. We added a little tabasco sauce though cause we like things a little spicy. I did not see a need to use the oil and used 1 1/2 cups broth. - 1/15/09

    This looks like a good recipe, but I have to say that I cannot FATHOM how one serving could have 345 calories. Could this be for the whole recipe? Seems high to me. - 1/14/09

    I'm not sure- the ground beef was pretty high in calories. I remade it using 93% lean ground turkey, omitted the oil and used a 15 oz can of salsa & a 1/2 cup ff cheese. The calorie content is about half, and it's still yummy. It's saved/shared as Mexican sloppy Joses. Hope you enjoy : )
