Easy and delicious! Could add eggplant, but I didn't have any. I cut the recipe in half (omitting the red and orange pepper because I didn't have any). So glad, I have leftovers, it's that good! - 5/18/12

    Incredible!
I added some asparagus, summer squash, and italian seasoning. Also, I only used 1 tbsp of olive oil along with some olive oil cooking spray to reduce the calories. This is my favorite way to get in lots of servings of veggies!! - 6/25/11

I love grilled veggies on the grill, also great under the broiler, but need to watch. I add fresh garlic and mushrooms, once the garden season is ripe, there are so many different veggies that can be used. A great meal in itself! - 3/17/07
