Ingredients

    3 slices bacon
    1 cup chopped carrots
    4 oz. chopped green chilies
    1 cup chopped onions
    1 tsp. garlic salt
    1/2 tsp ground cumin
    5 cups diced peeled potatoes
    2 -14.5 oz. cans chicken 98% fat free broth
    1/2 tsp. salt
    1/3 cup flour
    2.5 cups 2% milk
    8 oz. 2% milk cheddar cheese
    green onion tops


Directions

in large pot cook bacon until crisp. transfer to paper towel and set aside. Discard all but 1 Tblsp. of fat. Add carrots, chilis, onion, garlic and cumin, saute until golden brown. Add potatoes, chichen broth and salt. Bring to a boil. Reduce heat to simmer, coverl pot and cook for 25 minutes or until tender. IN bowl, gradually whisk milk into flour mixture is smooth. slowly whisk milk mixture into soup. Cook over med heat, stirring occasionally, until soup thickens, about 12 minutes. Crumble reserved bacon and chopped green onions

    Very good and filling. However, I wanted to point out that the calories per serving are off by 40. This recipe was calculated with cottage cheese and not shredded cheese like the recipe says. It is actually 200 calories per serving not 156. Still low cal but just a little more. FYI - 2/8/11

    Sorry, add cheese to the soup as the last ingredient after the milk and flour mixture.

    I started with a ham bone, so no chicken broth or bacon. Realized I only had 1/2 cup of milk left, so not exactly the same recipe. Overall, it tasked great and everyone had seconds. - 6/23/11

    I really like this soup! I did not use bacon as my boyfriend does not eat pork, but it turned out much better than expected. I did however add a little red crushed pepper to give it a little kick! - 6/18/10

    Delicious! I used chicken boullion since I didn't have broth on hand, and used Colby and Monterey Jack cheese instead of Cheddar. Yummy! Even my 13 year old son loved it! - 2/14/10

    I made this soup several times and it wonderful. I skipped the bacon each time. However the sodium content is pretty high ~ not good for someone trying to stick to a low-sodium diet!

    I skipped the bacon, used a touch of dried red pepper instead of the chiles, and, as others have mentioned, used fresh garlic. I also used 4 0z sharp chedder, and added a couple tablepoons of dried parsley to get some green in there. Really tasty - will make it again! - 3/13/09

    I made this last night and it was great! I didn't have any green chilies, and I used skim milk. I also used real garlic and a chopped celery stalk,and browned them with the onions and carrots. I think it would have been even better with the chilies, but otherwise it was terrific! - 1/28/09

    This soup was very yummy!
    It tastes so creamy, you do not even miss all of the calories in a traditional baked potato soup. I portioned the soup into easy to grad containers! Made lunch so easy this week, and very filling!
