Introduction

Ingredients

    1 medium head of cabbage
    4 medium yellow onions.
    1C cider vinegar
    2/3C sugar
    2/3C water
    1t yellow mustard
    1t celery seed
    1t salt
    1/4C veg oil.

Directions

Shred Cabbage and Onions very thin. 2mm blade on Cuisinart. Mix in large heat-proof bowl.
Combine remaining ingredients EXCEPT oil. Simmer 10 minutes.
Add oil and bring back to a boil. It wil foam up. Stir to keep it from foaming over. I do all of this in a 4C measure in the microwave...
Pour boiling dressing over cabbage and onions. Stir to combine. Press down so liquid covers vegetables.
Let cool till you can handle it, then knead until cabbage and onions collapse; refrigerate a couple of hours to cool. You can skip kneading if you have to refrigerate overnight.
Will keep for a couple of weeks in the dressing. Drain and serve ~1/3 cup.

    I made this to serve for Thanksgiving. I added julianned broccoli, carrots, and cauliflower and left out the onion. It is fantastic. The dressing is just the right blend of sweet and sour and not overly creamy. - 11/19/12

    I was looking for a slaw recipe without mayo and am so glad I found this. Awesome. The only changes were I used olive oil instead of vegetable oil and sauteed the onions. I will be making this again. Thanks for sharing. - 10/23/10

    I actually just made this last night with no recipe to go by. I wanted something quick, easy and different. I really love mayo slaw but it's not healthy and I refuse to use fat free mayo. The only things I did different is add a tablespoon of honey dijon mustard, use EVOO instead of veg oil. - 8/18/10

    Made this last night, but I didn't have cider vinegar and used red wine instead and didn't have an onion but added carrots and it tastes great. Next time I make it , which I will, I'll try it with the cider vinegar and add some onions. - 6/7/10
