Ingredients

    Pink Salmon (canned), 1 can 14 3/4 oz
    Onions, raw, 1/4 cup, chopped
    Yellow Cornmeal, 1/4 cup
    Egg, fresh, 1 large
    *Flour, white, 1/4 cup
    Kraft Mayo Light Mayonnaise (Mayo), 3 tbsp
    Pepper, red or cayenne, 1/4 tsp
    Salt, 1 dash
    Pepper, black, 1 dash
    Olive Oil, 1/2 tbsp

Directions

Open salmon and drain thoroughly. Place drained salmon in mixing bowl and flake evenly with a fork.

Add onion, cornmeal, flour, mayonnaise and egg. Stir until well blended.

Shape the mixture into patties about the size of an average burger or less.

Cook in oil in a skillet over medium heat until browned on each side. Turn once while frying.

    I experiment with new salmon patty recipes almost every week, and this is WOW!!! It is "heavy" enough that it takes care of any fried food cravings I have. My husband and both of my kids (ages 2 and 5) loved them as well! - 2/21/11

    This was delicious - I grew up with my Great-Grandmother's salmon croquettes and these really took me back.
    Made mine using 4MSDEE's suggestion of baking (thank you for the degree/times!) and they ended up a little bit on the dry side - probably just my oven.
    Still wonderful! Will fix again.

    This recipe is good. I don't use the mayonnaise, but add another 1/2 Tbl of oil. I also line a cookie sheet and spray with pam before placing patties on the cookie sheet and then coat the tops with pam. I bake in a 425 degree oven for 20 minutes, turn them over and bake for an additional 20 min. - 9/30/08

    Delicious and easy -- great combination!! Some of us in my family found it a bit too spicy, so I'll reduce the cayenne to 1/8 tsp next time, and maybe substitute a tablespoon of Dijon mustard for one of the tablespoons of mayo. - 9/27/11

    Made almost the exact same thing today. Instead of mayo I use a half a cup of dijon or horseradish mustard, and a half a cup of plain yogurt. Comes out amazing! - 12/28/10
