Ingredients

    Two fresh turkey legs
    3 quarts of water
    0.5 oz orzo

    A cup of sliced zucchini
    A cup of sliced carrots

    Rosemary, sage, black pepper, oregano

Directions

Cover turkey legs in water in large pan. adding rosemary, sage, black pepper, and oregano (I like a total of about a tablespoon), heat to rousing simmer on high.

Add zucchini, carrots, raisins, orzo and cover then allow to simmer , covered at medium for two hours or til the meat falls off the bone.

Keep a casual eye and nose on the whole to make sure the liquid doesn't go away.

Eat hot or cool and store. Nice.

I liove in the UK and have no idea what orzo is. Please could someone help. The recipe sounds great and I want to try it. Thanks! - 11/25/08

Hi! Orzo is a very small pasta, about the same size as rice. Any tiny pasta will do. A tablespoon or two of Rrce would actually do, but it would be a bit different taste and texture! Enjoy! Kathy

This sounds really good, but I have a question about amounts. Does it really say 1/10 cup of raisins and 1/2 ounze orzo? - 11/13/08

yes, it really does. I had trouble indicating that there's just a scatter of raisins (high sugar) and orzo to add texture. I hope that helps -- it keeps the carbohydrates down, the texture interesting, and the emphasis on the vegetables. 1/10 cup is probably a tablespoon or so. Same w/orzo.

This is great-really yummy!Only change I made was I did a mirepoix of the carrots, celery, onion, and then added the broth and remaining ingredience, adding the orzo in the last 8 minutes.Definitely would make it again! - 11/12/08

This sounds really good but does it really serve 8 people? It just doesn't seem like enough food. - 1/22/09

Julie... thanks. I'll edit that. I'm sure that I made that comment because it really did take me 8 times through to finish it. But... I can see how it might be scant for some. Thanks.

I have a turkey carcass (that wasn't carved very well so there's still a good amount of meat on it) sitting in my fridge waiting to be used. I love the flavor combos in this and will definitely use it as a starting point! - 1/21/09

This sounds sooooooo good, especially for the cold days ahead. As my hubby does not care for Turkey leg, I think I will use a thigh. Can't wait to try. - 12/11/08

I checked out your recipe but have never seen just turkey legs for sale before and certainly wouldn't cut them off my whole turkey. How much is .5 oz. of orzo? Maybe I'll try this with about four chicken legs and see how it turns out. I, too, think a crock pot is a great idea! - 11/15/08
