Ingredients

    1 1/3 cups of water
    2/3 cup long grain rice
    1/2 of a 12-ounce can (3/4 cup) evaporated fat-free milk
    1/3 cup mixed dried fruit bits
    2 teaspoons honey
    1/4 teaspoon ground cinnamon
    1/8 teaspoon salt
    1 cup sliced, peeled peaches or frozen sliced peaches, thawed
    1/4 cup vanilla fat-free yogurt

Directions

1. In a medium saucepan stir together the water and uncooked rice. Bring to boiling; reduce heat. Simmer, covered, for 15 to 20 minutes or until rice is tender.

2. Stir evaporated milk, fruit bits, honey, cinnamon, and the salt into cooked rice. Bring just to boiling; reduce heat to medium-low. Cook, uncovered, about 5 minutes or until mixture is thick and creamy, stirring frequently. Serve pudding warm topped with peache4s and yogurt. If desired, sprinkle with additional cinnamon.

    Looking at the item by item calorie breakdown, I'd like to know how a 1/4 teaspoon of cinnamon with an optional additional sprinkle on top equates to 16 calories from the cinnamon per serving? That seems like a miscalculation to me. - 1/4/11
