Ingredients

    1 large package crescent rolls
    1 lb. hamburger
    1 medium onion
    16 oz. can refried beans
    1 package taco seasoning mix
    1 C. reduced-fat sour cream
    1 large egg
    2.5 C. fat-free shredded cheddar cheese

Directions

Pre-heat oven to 375.
Chop onion.
Press rolls into the bottom of a 9 x 13 pan.
Brown hamburger and chopped onion.
Drain.
Add the refried beans and taco seasoning to the hamburger and onion, mix together.
Spread mixture over the rolls. Mix egg and sour cream together and spread over meat mixture. Top with cheddar cheese and sliced black olives (optional).
Bake at 375 for 35-40 minutes.

Serve over shredded lettuce and top with salsa.

    Incredible!
    This was wonderful! I used about 1 cup of cheese instead, and next time I might try 1/2 jack cheese. Even my children liked it - the four y/o cleaned her plate! We served corn on the side, but I think it might be good added with the refried beans. Dh definitely requested it to be in our rotation :-) - 3/21/09

    My Kids loved it. It was very delicious. I substituted the cresent rolls for pizza crust for family reasons, but it was a big success. We will definately have it again! - 3/11/09
