Number of Servings: 8

Ingredients

    1 - 16 oz container 2% Cottage Cheese (could think about try to drain this item some - cooking time took longer as is - added 20-25 minutes to cooking time with our oven)
    1 - 10oz pkg frozen chopped spinach, well drained
    1 cup - part skim Mozzarella Cheese
    4 eggs, beaten
    1 - 7 oz jar - roasted red peppers, well drained, chopped
    1/3 cup - Grated Parmesan Cheese
    1 tsp. - dried oregano leaves - I used mixed dried Italian seasoning


Directions

Makes 8 slices of pie.

Could be eaten at any time, breakfast, lunch or dinner - love this recipe, came from 100 Best Favorite Brand Name Recipes 2003.

Mix all Ingredients.

Pour into greased 9-inch pie plate.

Bake at 350*F for 40-65 minutes or until center is set (thick like quiche).

Extra bake time was well worth the wait - my family loves this recipe 100%!

    Mama mia! Delicious! I tried draining the cottage cheese in a sieve but didn't get much liquid out. I also sprinkled the Parmesan on top instead of mixing it in — not a success — next time it gets mixed in. I'm going to substitute nonfat dairy & egg whites next for lower calories & fats.     Thanks for posting this fave of mine!!! I'm away for summer & my "Brand Name" book's at home.
    I always squeeze the spinach dry as I can, in the waxed box. Cuts down baking time.
    If you use glass pie pan & microwave several minutes, this also reduces oven baking time.
