Introduction

Number of Servings: 2

Ingredients

    Half a large sweet potato
    1 cup black beans
    1 galic clove
    Half an onion
    2 wedges light laughing cow cheese
    1 tsp cumin
    hot pepper flakes
    Salt and pepper to taste

Directions

Bake sweet potato in skin at 400 degrees for one hour.
Brown onion and galic in skillet until soft.
Add black beans and spices and cook for 5 minutes.
Mash together black beans and the laughing cow cheese until creamy
Heat tortilla.
Mash sweet potato on top of tortilla.
Add the bean cheese mixture.
Roll and Enjoy!

    Very good! I put a thin slice of ham on each tortilla before adding the sweet potato and beans and used farmer cheese instead of Laughing Cow. Microwave the sweet potato on high for 8 minutes rather than baking to save time. Tried a second batch adding spinach, rice, and cheddar. Yum! - 1/10/08

    Really good! I doubled it just to use the whole potato so my husband had a snack after work and he LOVED them. I didn't have any pepper flakes, so I left them out, and used less cheese to reduce a few calories there. Great recipe!! - 4/20/07

    The recipe doesn't include tortillas for calorie count... I guess it can be added to the tracker separate...

    I order this dish at a resturant, but didn't have the recipe. This is very close to what I had except I left off the Laughing Cow cheese and added collards to the sweet potatoes and beans.     If you are in a hurry, I micrtowaved the sweet potato. Then I microwaved the black beans and used a garlic and herb laughing cow wedge to replace the garlic, onion and spices. Not as good as the origional recipe, but still very tasty. - 1/18/11

    I made up all the burritos and individually wrapped each one. I froze all of them for grab and go box lunch items during the week.
