Introduction

Ingredients

    2 cups Onions,
    2 tbsp Extra Virgin Olive Oil
    1 tsb Crushed Garlic
    1.5 lbs boneless, skinless chicken breast, cubed
    2 cups chicken broth
    4 tbsp (one 4oz can) Green Chilies chopped
    1/2 tsp Oregano, ground
    1/2 tsp Coriander seed
    1/4 tsp Cumin seed
    1/4 tsp Pepper, black
    1.75 cups white corn
    2- 15.8 oz cans Great Northern Beans
    salt to taste

Directions

1. heat olive oil, onions, and garlic.
2. add chicken and cook through
3. add broth, chilies and spices. bring to a boil, then simmer 10 minutes.
4. add corn and beans; simmer 5 minutes. season with salt and pepper to taste

optional: serve with limes, cilantro, cheese avocado, sour cream, and tortilla chips.

    I made this with 1 lb.of cubed chicken breast, and .5 lb. ground chicken (what I had on hand) Also, I didn't have coriander or black pepper~ so I used chili powder & white pepper instead. I omitted the corn all together...it is delicious :) Will be serving over brown rice.Thank you! - 3/1/17
