Number of Servings: 24

Ingredients

    2 cups flour, 1/3 cup unsweetened apple sauce, 1/3 cup vegetable oil, 3 egg whites, 2 tsp baking powder, 2 tsp baking soda, 1 tsp salt, 2 cups skim milk, 2 cups natural bran, 6 tbsp molasses, 1 tsp vanilla, 1 1/2 cups frozen blueberries, 1 1/2 cups frozen cranberries, 1/2 tsp stevia.

Directions

Mix dry ingrediants together, and set aside. Mix milk and bran and set aside letting soak for 5 minutes. Meanwhile, you can mix oil,apple sauce,molasses,vanilla,and egg whites together. Pour this into milk/bran mixture and stir. Add the berries, and stir. Add wet ingrediates to dry ingrediants and mix only to moisten. Cook for aprox. 20 mins.@350. Makes 24 muffins.

    [ did make some changes used whole wheat flour for 1/2 flour called for, used egg beaters for eggs, splenda for stevia. i make them twice in the fall and freeze what we do not eat for later. - 10/31/13

    I didn't soak the bran in the milk (accidentally) but it didn't seem to matter. The frozen cranberries are quite tart; I would probably like the craisins better except those would add sugar and therefore calories to this recipe. - 5/31/11

    These were very good. Instead of molasses I used agave nector (it's 10 calories less a teaspoon than molasses). I cut out the stevia. Very yummy! - 7/8/09

    Glad you enjoyed, I just made low fat pumpkin raison bran muffins which I have posted on here as well....they are delicious too, a least I think so.....just another option. If you try them, let me know what you think.
