Introduction

yummy, fluffy pancakes yummy, fluffy pancakes
Number of Servings: 12

Ingredients

    1 1/4 cup whole wheat flour
    3 tsp baking powder
    1 Tbsp sugar
    1/2 tsp salt
    1 egg, beaten
    1 cup milk
    2 Tbsp salad oil
    1 medium apple, chopped into small pieces

Directions

Combine flour, baking powder, sugar and salt. In separate bowl combine egg, milk, and salad oil and chopped apple. Add wet ingredients to dry ingredients (batter may be lumpy). Extra milk may be added. Cook on hot griddle (will not stick). Recipe can be doubled or tripled without problem.

Makes 12 pancakes.

*use about 1/4 cup batter per serving.
*cinnamon may be added for extra tasty pancakes

    I like these pancakes. I do not have access to wheat flour so I replaced 1/4 c flour with quick-cooking oats and grated the apple. Thank you this will be a regular on my list of breakfasts. - 9/6/07

    I like to mix reg. flour with the whole wheat flour so that the pancakes don't have such a dry and strong flavor---not as healthy, though. - 4/28/09

    I've just made a half batch, we added cinnamon, and 2 T of applesauce (no added sugar), and about 1/4 cup more milk. I also only used 1T oil. They are very yummy, will make again. - 7/28/07

    I made these apple pancakes for breakfast this morning, and they are very delish! My family loved them. Easy to make (did need to add more milk, as suggested), they brown nicely and do not stick to the pan. Thanks for the recipe! - 3/11/07

    Incredible!
    These were great, but I made a few changes to suit my tastes. I used 1 Tbsp flax meal mixed with 2 Tbsp hot water in place of the egg, grated my apple, added 1 Tbsp of unsweetened apple butter, didn't use extra sugar, added 2 Tbsp of currants, 1/4 tsp nutmeg, and 2 tsp cinnamon.
