Ingredients

    1 lb. 93% lean ground turkey
    1/2 cup chopped onion
    1 Old El Paso enchilada dinner kit
    1/2 cup water
    1(4.5 oz) can chopped green chilis
    1 cup fat free sour cream
    1 cup Kraft 2% milk Mexican style four cheese shredded cheese

Directions

Heat oven to 350 f. Brown turkey and onion; drain. Stir in both pouches enchilada sauce,the seasoning mix, water, and green chilis. Heat until hot.
In ungreased 11x7 inch baking dish spread 1 cup of meat mixture. Cut tortillas in half. Place 6 tortilla halves on top; spread with 1/2 cup of the sour cream. Top with 1/2 cup of the cheese, 1 cup of the meat mixture, and 6 tortilla halves. Top with remaining sour cream, remaining meat mixture and remaining cheese.
Bake 30 minutes. cut into 6 equal size servings and enjoy.

    Instead of the chilis I used a can of Rotel tomatoes with chilis. It added some extra flavor but was a little too spicy. I might just use 1/2 can rotel next time. The serving was very filling and low cal. My whole family loved it and we will have again very soon. - 6/15/09

    This is really good! I improvised a bit without the dinner "kit". Used one can of enchilada sauce and a packet of taco seasoning. I also added black beans, corn, and black olives (All of which I drained and washed). I also added a bit of yellow pepper to the onion/meat stage. - 3/21/11

    Delicious! Because I like things milder, I used green onions instead of chilis. I also didn't use the dinner kit and instead used whole wheat tortillas and bought the enchilada sauce and seasoning powder separately. Can't believe this isn't more calories! - 1/17/10
