Ingredients

1 head of cauliflower, trimmed and florets steamed
1/4 cup sour cream
2 oz cream cheese, softened
1/4 tsp onion powder
1/4 tsp garlic powder
salt and pepper to taste
Directions
After you have steamed or boiled the trimmed cauliflower florets, drain and return to pan. Mash well and stir in the sour cream, cream cheese, onion powder, garlic powder, and salt and pepper to taste. Put into a round baking dish, cover and bake at 400 degrees for 20 minutes. Makes 8 servings 1/2 cup each.

I love this. I used plain Greek yogurt instead of sour cream and Neufchâtel cheese instead of cream cheese (mainly because it's what I had on hand). I also used the food processor instead of just 'mashing', which made it much creamier. Maybe not exactly mashed potatoes but close enough and tasty en - 6/26/16

I found this required a fair amount of salt added (at least 1/4 teaspoon) which I am trying to avoid. I would make this recipe again but maybe suggest to those on low-sodium diets like me to tweak with real onion and garlic to give it a boost. I think a bit of horseradish would be good too. - 8/12/12
