Introduction

This is one recipe for cauliflower everyone will love! This is one recipe for cauliflower everyone will love!
Number of Servings: 8

Ingredients

    1 head of cauliflower, trimmed and florets steamed
    1/4 cup sour cream
    2 oz cream cheese, softened
    1/4 tsp onion powder
    1/4 tsp garlic powder
    salt and pepper to taste

Directions

After you have steamed or boiled the trimmed cauliflower florets, drain and return to pan. Mash well and stir in the sour cream, cream cheese, onion powder, garlic powder, and salt and pepper to taste. Put into a round baking dish, cover and bake at 400 degrees for 20 minutes. Makes 8 servings 1/2 cup each.

    Loved this and can't wait to make again. I changed a few ingredients to make it slightly lower in calories and fat. I used low fat sour cream and reduced fat cream Cheese. I used a 1/4 cup chopped onion and real garlic instead of the powers. MMMmmmmm!!! - 3/28/11

    While this recipe was very good, it really wasn't the same as mashed potatoes. Next time, I will add rosemary and fresh pressed garlic to it and maybe some real onion. I also added shredded cheese to the top. Everyone ate it (4 kids and hubby) and I enjoyed it. - 2/28/12

    Made this two times now and my hubby begs for it once a wk now. I added half a cup of non fat cottage cheese, use non fat sour cream and non fat cream cheese and blend the mixture in a blender. sprinkled with a tiny bit cheese. Turns out fantastic! Thanks so much for the recipe. - 9/14/12

    Used lower calorie versions of sour cream and the cream cheese, which brought total down to 42 calories per 1/2 cup serving. Also use this recipe for shepherds pie, etc.
    Everyone loves it, no matter how it's used!!

    Love this recipe! I tweaked it a bit in that I had a small head of cauliflower, so I halved the amount of sour cream and cream cheese it called for. I also omitted all seasonings in favor of a lemon-garlic seasoning blend. :-) - 10/3/10

    I tweaked it just a bit based on my own tasted, but it's a really great base. I used minced garlic and added just a bit of shredded cheese to the food processor before mixing it all together. Even my 3 year old ate it! - 8/5/10

    They are very good. I have never had anything like this, so I tried them. I really enjoy them but they dont really remind me of "mashed potatoes". Maybe by them being white is about it. But they did taste great and I will be making again. - 8/5/15

    I love this. I used plain Greek yogurt instead of sour cream and Neufchâtel cheese instead of cream cheese (mainly because it's what I had on hand).     You can do the same recipe with rutabaga and it tastes great. Choose a rutabaga about the same size as a small head of cauliflower. Peel it, cut it into chunks and steam it. - 2/4/15

    This recipe is fabulous, my husband will eat every bite. I add a tablespoon of instant potato flakes. It soaks up the extra moisture and makes it much more potaot like. I don't use the sour cream at all. - 9/28/14

    Potatoes have an undeserved bad reputation. They are loaded with potassium and fiber. Caulilflower is very nutritious to0... this recipe might look like mashed potatoes, but it certainly does not taste the same.

    I made these once; ate some of them, put the rest in the fridge. (Not at all like mashed potatoes, by the way.)

    The cauliflower needs to be well cooked, otherwise you don't get the smoothness of mash.
    And it definitely needs to be seasoned, to taste.
    But - yum!
    I still haven't managed smooth mash, but I personally enjoy a bit of texture, especially with cauliflower. Hubby prefers it smoother.

    I found this required a fair amount of salt added (at least 1/4 teaspoon) which I am trying to avoid. I would make this recipe again but maybe suggest to those on low-sodium diets like me to tweak with real onion and garlic to give it a boost.     I left out the cream cheese and sour cream. I used fresh basil to season with the other seasonings using fresh garlic instead of powder. I also added a 1/4 cup of milk. No doubt it would have tasted better with the cream cheese and sour cream. - 8/6/12
