Introduction

These flourless, sugarless cookies are potassium powerhouses! These flourless, sugarless cookies are potassium powerhouses!
Number of Servings: 24

Ingredients

    3 ripe bananas
    2 cups rolled oats
    1 cup raisins
    1/3 cup sunflower oil
    1 teaspoon vanilla extract

Directions

1. Preheat oven to 350 degrees.

2. In a big bowl, mash the bananas with a potato masher.

3. Stir in oats, raisins (or other dried fruit), oil (sunflower or any you prefer), and vanilla. You can also stir in nuts. I frequently do.

4. Mix well, and allow to sit for 15 minutes. Drop by spoonfuls onto an ungreased cookie sheet.

5. Bake for 20 minutes in the preheated oven, or until lightly brown.

Makes 24, 2 inch blobs.

    Next time I will reduce the oil to 2 tbsp and substitute unsweetened applesauce for the rest of it. I don't know why there is so much oil in this recipe. - 2/16/11
