Ingredients

    1 can low-sodium chicken broth
    1 16 oz can chopped tomatoes
    4 links low-fat italian sausage, cut into 1/2 inch pieces
    1 cup chopped onions
    2 medium potatoes diced
    1 garlic clove
    1 tsp basil

Directions

Makes four servings

Put chicken broth in pot, bring to a simmer. While broth is heating, saute sausage & onions in saucepan coated with cooking spray. When broth comes to a simmer, add sausage, onion & all other ingredients. Cover and simmer 30 minutes or until potatoes are soft and flavours have blended.

    Incredible!
    I used vegetable broth because I didn't have chicken broth and I didn't have any basil so I used fresh parsley and some dried thyme. This soup is fantastic!!! - 4/11/10
